Homemade Sugar-Free Ice Cream | Chocolate Espresso

I started making this chocolate espresso ice cream recipe for my husband when we switched to a lifestyle without sugar. He is the kind of guy that almost always had the carton of ice-cream in the freezer, and every night before bed, he enjoyed a huge bowl of his favorite store-bought ice-cream.

I knew that when we gave up sugar, I would have to find an alternative to the heavily processed, sugar-laden store-bought varieties that he enjoyed. I have made this recipe so many times and each time I would adjust a little here and a little there until I felt like I got it just right.

Keto | Sugar-Free Ice Cream Maker

There are so many ice-cream makers on the market but I personally own this 4 quart wooden ice cream bucket maker. I personally love the old fashioned look of the wooden bucket and the fact that it is electric is a huge bonus! I don’t know about you but I sure don’t want to stand and hand crank for a long period of time.

When I was shopping for an ice-cream maker, I really wanted that I could stick the bowl in the freezer and then not have to mess with having to use rock salt and ice. However, I haven’t seen one large enough to hold 4 quarts so that is why I went with the one I currently have.

Chocolate Espresso Ice Cream Recipe

5 1/2 cups of Heavy Whipping Cream
2 cups Cold Brew Coffee
1 cup Cottage Cheese
2 tsp Vanilla
7 tablespoons Birch Bark Xylitol
2 teaspoons Stevia
3 tablespoons Cacao Powder
1/4 teaspoon Celtic Salt

How to Make Chocolate Espresso Ice-Cream

Did you see the cottage cheese and do a double-take to see if you read correctly? Well, you did! I love finding ways to sneak healthy foods into our diet and this is one great way to do it! You never know that it is there and it adds to the creaminess of the ice-cream.

This chocolate espresso ice cream recipe makes a lot of ice-cream and you can cut it in half to make a smaller batch.

Instructions


  1. In a blender, combine the cottage cheese and two cups of the heavy whipping cream. Blend just long enough to get the cottage cheese smooth and well mixed with the heavy whipping cream.



  2. Pour the mixture from the blender into the ice-cream maker, and then add the rest of the ingredients.



  3. Give everything a really good stir to combine all the ingredients.



  4. Then, follow the instructions on your ice-cream maker to finish making the ice-cream.



  5. Enjoy right away or place in the freezer for later.


How to Store Homemade Ice-Cream

I have made this ice-cream with a variety of nut milk or a mixture of nut milk, heavy whipping cream and half n half. One of the issues that I had was that when the ice-cream was frozen, it was difficult to scoop and didn’t really have that smooth, creamy texture. This recipe freezes very well and I freeze it in the container that I make it in, but I remove the middle piece that mixes the ice-cream while it is in the maker.
