I can’t think of a hearty breakfast skillet without thinking about all the comfort foods served around the farmhouse table. Generations of hard-working country farmers started their days with a large country breakfast, knowing they needed the nutrition to fuel their bodies for the long day ahead.
A farmhouse breakfast meal might consist of buttermilk biscuits, homemade sausage gravy, perfectly fried bacon, and over-easy eggs. Served with a pot of coffee and a bit of fresh cream from the farms’ milk cow, it was a farmers’ breakfast to be enjoyed by the entire family.

What to Put in a Country Farmers Breakfast Skillet
A breakfast skillet is a perfect meal for when you want a big breakfast with all the farm-fresh nutritional ingredients. Everything comes together in one skillet, in about an hour.
- Farm Fresh Eggs – There are many varieties of eggs available, and I always suggest farm-fresh eggs. They really do taste better, and if you can find a local farmer to support them, all the better!
- Bacon – For this recipe, I use uncured farm-fresh bacon with no sugar. Cooking bacon with sugar as an added ingredient can easily burn because of the sugar that burns and leaves residue on your cooking surface.
- Ground Breakfast Sausage – In our home, I use local farm fresh ground sausage without all the added ingredients, especially sugar.
- Half n Half – could also use milk or heavy cream.
- Shredded Cheese – this is a personal preference, but we love Pepperjack or Cheddar.
- Bell Pepper – I like using red and orange, but any color will work for this recipe. Look for peppers that are bright, shiny, and firm. Avoid those that have wrinkled skin or soft dark spots.

How Do You Make a Breakfast Skillet from Scratch?
Step 1: Cook the Sausage
Heat a cast-iron skillet over medium heat, and once hot, add in the sausage. Break apart the ground sausage with a spatula into small pieces. Stir occasionally as it browns, typically taking about 8 to 10 minutes. Remove the sausage from the skillet and drain it on a paper-towel-lined plate.
Step 2: Cook the Bacon
Add the bacon into the same skillet that the sausage was cooked in. Cook the bacon until it starts to brown on one side. Use tongs to flip the bacon over to cook on the other side, occasionally flipping to prevent burning. Cook until crisp, about 8 to 12 minutes.
Transfer the cooked bacon to a paper towel-lined plate to drain and cool, then coarsely chop. Pour off the bacon grease into a jar, but keep 2 tablespoons in the cast iron skillet.
Step 3: Saute the Vegetables
In the large cast-iron skillet with 2 tablespoons of bacon grease, add in bell peppers and onions. Cook 3 to 5 minutes, occasionally stirring until soft. Add in minced garlic and cook for 1 to 2 more minutes.
Step 4: Mix Eggs
In a large mixing bowl, crack the eggs and add half n half salt, pepper, and 1 cup of shredded cheese. Whip the egg mixture until fluffy.
Step 5: Add in Vegetables
Remove the bell peppers, onion, and garlic from the cast iron skillet and mix in with the eggs. Beat again until fluffy.
Step 6: Layer in Cast Iron Skillet
In the large cast-iron skillet, layer the sausage on the bottom and then crumble the bacon to layer on top of the ground sausage. Pour the egg mixture over the top and add the remaining 1 cup of shredded cheese to the top.
Step 7: Bake
Place the country farmers’ breakfast skillet in the oven at 350 degrees and bake until the eggs are set, 40 to 50 minutes.
Step 8: Enjoy
Serve fresh from the oven and enjoy with a large glass of milk, freshly squeezed orange juice, or a hot cup of coffee with fresh cream.

To store this country farmers’ breakfast skillet, allow it to cool, and then place it in a refrigerator-safe glass storage bowl with a lid. Store in the refrigerator for up to 3 days. To reheat, place in an oven-safe dish and warm up in the oven.

Ingredients
- 18 farm fresh eggs
- 2 cups half-n-half
- 1 pound bacon
- 8 ounces ground breakfast sausage
- 2 cups shredded cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onion
- 1 teaspoon minced garlic
- salt and pepper to taste
