There are several nights in the week that I simply want to put a meal on the table, quickly. I like quick easy meals that are versatile, delicious and easy to make.
In my kitchen, I use cast iron skillets more than any other pot or pan. Cooking up a meal in one skillet means less dishes and less time in the kitchen. This sour cream chicken enchilada skillet meal is one of my favorites. It is a cheesy delicious comfort meal.

Ingredients for Sour Cream Chicken Enchilada Skillet
- 1 pkg of taco seasoning or use the recipe below to make your own
- grease or butter
- 2-3 pounds of chicken
- 8 ounces of cream cheese
- 1 cup sour cream
- 1/2 cup chicken broth
- cheese – pepper jack or monterey jack
How to Make Creamy Sour Cream Chicken Enchilada Skillet
Step 1: Mix the Homemade Taco Seasoning
If you have a package of taco seasoning on hand, you can skip this step and move onto preparing the chicken. I always have spices on hand and like to make my own seasonings.
To make homemade taco seasoning, in a small bowl mix together:
– chili powder 1 tbsp
– cumin 1 tsp
– garlic 1 tsp
– paprika 1/2 tsp
– oregano 1/2 tsp
– dried minced onion 1/2 tsp
– celtic salt 1/2 tsp
– pepper 1/4 tsp
Reserve 1/2 tbsp of the taco seasoning to make the creamy sauce. The rest of the taco seasoning will be used to season the chicken.
Step 2: Cook the Chicken
In a large cast iron skillet, place a couple tablespoons of butter or bacon. After skillet is hot, add chicken. Season on both sides with taco seasoning mix, then, cook chicken until no longer pink. Turn the burner off and allow chicken to slightly cool.
Once the chicken has slightly cooled, cut into small pieces or shred. Use kitchen meat scissors to cut the chicken into small chunks rather than shredding.
Leave the chicken in the skillet and prepare the creamy white sauce.
Step 3: Make the Sour Cream and Cream Cheese Sauce
In a blender, blend together:
– 8 ounces of cream cheese
– 1 cup sour cream
– 1/2 cup chicken broth
-1/2 tbsp taco seasoning mix
After blending mixture together, add to the chicken in the cast iron skillet.
Step 4: Grate Cheese
For this recipe, use either pepper-jack cheese or monterey jack. Both of them add a delicious flavor. I never use an exact measurement for cheese, just put a thin layer on the top, according to what your family enjoys.
Step 5: Bake
Put the sour cream chicken enchilada skillet in the stove on 350 degrees. Bake until the cheese melts, then, serve hot. Enjoy!

- 2-3 pounds of chicken breast tenders
- 8 ounces of cream cheese
- 1 cup sour cream
- 1/2 cup chicken broth
- 1-2 cups cheese - pepper jack or monterey jack
- TACO SEASONING
- - 1 pkg taco seasoning or make homemade taco seasoning, in a small bowl mix together:
- - 1 tbsp chili powder
- - 1 tsp cumin
- - 1 tsp garlic
- - 1/2 tsp paprika
- - 1/2 tsp oregano
- - 1/2 tsp onion powder or minced onion
- -1/2 tsp celtic salt
- -1/4 tsp pepper
- Reserve 1/2 tbsp of the taco seasoning to make the creamy sauce. The rest of the taco seasoning will be used to season the chicken.
- CHEESE SAUCE
- In a blender, blend together:
- - 8 ounces of cream cheese
- - 1 cup sour cream
- - 1/2 cup chicken broth
- -1/2 tbsp taco seasoning mix
Instructions
- In a large cast iron skillet, place a couple tablespoons of butter or bacon. Once the skillet is hot, add the chicken. Season chicken on both sides with taco seasoning mix. Cook chicken until no longer pink. Turn the burner off in order to allow the chicken to slightly cool.
- Once the chicken has finished cooking and has slightly cooled, cut into small pieces or shred. Leave the chicken in the skillet and prepare the creamy white sauce.
- In a blender, blend together:- 8 ounces of cream cheese- 1 cup sour cream- 1/2 cup chicken broth-1/2 tbsp taco seasoning mix. After blending, pour the sour cream mixture over the chicken.
- Grate the cheese. For this recipe, I like to use either pepper-jack cheese or monterey jack. Sprinkle cheese over the top.
- Put the sour cream chicken enchilada skillet in the stove on 350 degrees. Bake until the cheese melts.
Notes
This recipe can be adapted to the taste that you and your family enjoy. For the creamy white sauce, adding jalapenos will give it some great spice. I have added green chilies as well as cilantro while making the sauce. If you choose to add extra ingredients, blend them in the blender with the cheese sauce.
Adjust the spices according to your taste. If you think it might be too spicy, don't add all of the taco seasoning when flavoring the chicken.
Adjust the salt to your desired taste.
