1. Add Soup Ingredients

Add the drained canned corn, drained and rinsed beans, tomato sauce, and green chiles to a large dutch oven. Then add in the diced cooked chicken breasts along with the spices.

2. Add Chicken Broth

For this perfect recipe, I use 32 ounces of organic chicken broth. Once all the ingredients are in the dutch oven, add the chicken broth until it covers all the ingredients in the pot.

3. Let it Simmer

Bring your soup to a boil over medium heat. Once boiling, reduce the heat to low, put the lid on, and let it simmer for a minimum of an hour to let all the flavors meld together.

4. Add Cream Cheese

To achieve a creamy, smooth soup, incorporate the cream cheese in one of two ways. Firstly, you can add it to the pot and stir until melted. Alternatively, blend 1 cup of the soup broth with the cream cheese in a blender, then add it back to the soup and stir until well combined.

5. Garnish and Enjoy

Sample the soup and add additional salt if necessary. Ladle the soup into individual bowls, garnish with your favorite toppings, and enjoy!

How to Serve Creamy Southwest Chicken Soup

When it comes to serving healthy southwest chicken soup, the possibilities are endless. One popular option is to serve it with tortilla chips for a delicious crunch.

You can also top the soup with freshly sliced avocado, a dollop of sour cream, or a sprinkle of grated cheese for added creaminess and flavor.

Add sliced jalapeno peppers or a drizzle of hot sauce for those who love a little heat to kick the soup.

Storing and Reheating

To store leftover southwest chicken soup, let it cool down completely before transferring it to an airtight container. Place it in the refrigerator and keep it for up to four days.

If you want to freeze it, transfer it to a freezer-safe container, seal it tightly, and freeze it for up to three months.

When reheating, do not heat in the microwave; instead, slowly reheat on the stove.
