How to Make Stuffed Breakfast Avocado Egg Cups
Step 1: Fry Bacon
In a large cast iron skillet, fry the bacon to your desired crispness. After bacon has fried, set aside to cool. Crumble bacon into small pieces. Don’t forget to save your bacon grease, use it later to make the best fried sweet potatoes.
Step 2: Scramble Eggs
In a cast iron skillet, add a small amount of butter or bacon grease. Hit skillet to medium heat. Crack and add the desired amount of eggs into a bowl. Whisk, season with salt and pepper. After whisking, pour egg mixture in the skillet. Scramble eggs to your desired liking.
Step 3: Grate Cheese
For this recipe, you can use your favorite kind of cheese. Grate the amount of cheese that you need. I love the taste of scrambled eggs, bacon, avocado and pepper-jack. Pepper-jack cheese gives this recipe that tiny bit of spice that I love.
Step 4: Cut Avocado
Cut the avocado in half, long ways. Use a spoon to scoop out the avocado. Place the now empty avocado shell onto a plate. Slice the avocado into slices, then small chunks.
Step 5: Assemble
In the avocado shell (cup), place a small amount of scrambled eggs, then several avocado chunks. Then, add on the crispy bacon and pepper-jack cheese.

How to Store Stuffed Breakfast Avocado Egg Cups
Often times, I have leftovers for this meal. I use a glass refrigerator bowl to store the ingredients. In the bowl, layer scrambled eggs, chunks of avocado, crispy bacon and cheese. Place lid on bowl, and store in the refrigerator. This makes for a quick breakfast the next morning.

Bacon + avocado…it doesn’t get any better than that! I always add avocado to my BLT sandwich…which the kids have now named a BLAT…we’ll definitely be trying this recipe.
I have never added avocado to a BLT but I image that is very delicious!
