Our whole family most often enjoys this oven-baked chuck roast recipe on Sundays. In the mornings, all I have to do is wake up, sear the beef chuck roast, cut the root vegetables, mix the sauce and then place everything in the oven.

While we are at church, the oven does all the work roasting our delicious dinner to perfection in a cast iron dutch oven.

In our home, we try to use natural whole food ingredients and avoid many fillers found in processed foods.

So, with a few essential pantry ingredients, I will share my favorite way to make this recipe from scratch.

Add a few cans of organic cream of mushroom soup, and this recipe will make its own gravy from those pan juices and drippings!

The best Sunday pot roast recipe with potatoes and carrots starts with these simple ingredients.

While you do not have to use all organic ingredients in this easy recipe, I believe organic is the best in flavor and nutrition. Here is what you will need:

  • Boneless Chuck Roast: use a 3-5 lb chuck roast with rich marbling.
  • Fat: Coconut oil or lard are my top options for searing a chuck roast. Avoid using oils with a low smoke point, such as olive oil.
  • Organic Cream of Mushroom: this delicious add-in makes a wonderful creamy gravy for this tender dutch oven pot roast.
  • Organic Beef Bone Broth – can substitute beef stock
  • Dried Chopped Onion
  • Onion Granules
  • Garlic Granules
  • Celery Powder
  • Parsley
  • Celtic Salt
  • Black Pepper
  • Organic Potatoes: we love Yukon gold potatoes or small red potatoes for this recipe. Since I use organic potatoes, I do not peel them. They bake up perfectly tender and are so delicious.

How to Cook a Roast in the Oven with Vegetables

Step 1: Season Roast

Preheat the oven to 300 degrees F. Season both sides of the roast with salt and black pepper.

Step 2: Sear Chuck Roast

Heat coconut oil or lard over medium high heat, and place meat in a large dutch oven. Using tongs to rotate the roast, sear each side of the roast until golden brown in the hot oil.

Remove the dutch oven from the top of the stove. You will notice that there will be browned bits from where the roast has seared at the bottom of the pan. Leave them in the dutch oven as this is just added flavor.

Step 3: Chop Vegetables

On a cutting board, chop and dice potatoes and carrots. Place potatoes and other vegetables around the chuck roast in the dutch oven in multiple layers.

Step 4: Make Homemade Onion Mix

In a medium bowl, use a wooden spoon to mix together 2 cans of organic cream of mushroom soup, 2 cups organic beef bone broth, 1/4 cup dried chopped onions, 1 teaspoon onion granules, 1 teaspoon garlic granules, 1/2 teaspoon celery powder, 1 teaspoon celtic salt, 1/2 teaspoon pepper and 1 teaspoon parsley.

Pour the homemade onion soup mix over top of chuck roast and vegetables. Place lid on dutch oven and place in the preheated oven.

Step 5: Bake the Chuck Roast

Depending on the size of your roast, bake it in the oven for 3-5 hours at 300 degrees F. Roast is ready when it is fall apart tender.

Step 6: Serve

Transfer roast, potatoes, and carrots from the oven to a serving platter. Drizzle the gravy drippings over the top of the roast and vegetables.

Tips For Making the Best Oven Baked Chuck Roast Recipe

Same Size Vegetables: Try to cut all vegetables relatively the same size. I often choose baby carrots since they are already cut and generally the same size.

For the potatoes, I use baby Golden Yukons and quarter them. Since the vegetables are added at the beginning of cooking time, you want them to cook up tender but not mushy.

Add Other Vegetables: while our family prefers carrots and potatoes, you can use other vegetables such as parsnips, turnips, celery, yellow onions, green beans, or sweet potatoes for a hearty meal.

Sear the Roast: the secret to the most tender, delicious Sunday pot roast is to seal in the juices by searing the roast on all sides.

This helps to develop the rich flavor you can not get any other way.

What is the Best Meat for Pot Roast

When selecting the best cut of meat for a juicy pot roast, the tougher the cut, the better the pot roast. Tough cuts of meat have the toughest connective tissue. The tissue breaks down when cooked at a low temperature, resulting in tender beef bites.

Options such as chuck roast, shoulder steak, boneless beef chuck roast, chuck shoulder roast, beef chuck arm, rump roast, or bottom round roast will all work for making a delicious oven-baked roast.

But, for the best dutch oven pot roast recipe, use the boneless chuck roast. It is generally one of the inexpensive cuts of beef and has exceptional marbling. Once baked in the oven, it is a juicy and tender roast.

How Long To Cook Chuck Roast in Oven

The exact cook time will be different every time because every roast is different. After searing the roast to lock in all the flavor, a chuck roast should be baked for 3 hours for a 3-pound roast. If using a 4 to 5-pound roast, plan on 4 hours at a minimum.

Check the chuck roast with a fork; it needs extra time to cook if it is tough. Place the dutch oven cast iron lid back on the dutch oven and let it keep on cooking; the roast is ready when it is fall-apart fork tender.

When you have leftovers, it is guaranteed that you will want to warm them the next day. This oven-baked chuck roast recipe is easy to reheat when using an oven or microwave.

The flavorful gravy will have thickened after being refrigerated, but once warmed, it will thin.

  • Oven: To fully warm the chuck roast without drying it out, slice the roast and place it in a baking dish. Then, pour the leftover gravy over the meat, adding extra beef broth if needed. Place roast uncovered in a 250-degree oven. Roast for 1 to 1 1/2 hours or until the meat registers 120 degrees.
  • Microwave: Transfer chuck roast to a microwave safe dish. Add some gravy over the top and cover the dish with a microwave-safe lid or paper towel. Microwave for 2-3 minutes, stir, then continue to microwave for 30-second intervals until warm.
