Chicken breasts are something that I cook a lot in our home. I find that they are simple to cook for a quick and easy chicken dinner. Many times, I cook up extra to store in the fridge for a few days. They are perfect for adding to soups, chicken potpie or casseroles.

Ingredients for Healthy Oven Baked Chicken

  • Chicken Breast – generally, I bake 6-8 large organic chicken breast up at a time.
  • Spices – for this recipe, I use organic smoked paprika, organic sage, celtic salt and black pepper
  • Butter – real butter is drizzled on the stoneware baking sheet for the chicken to bake in. It is also rubbed on the chicken.

How to Make Oven Baked Chicken Breast

  1. Pre-heat oven 450 degrees.
  2. Bring meat to room temperature, chicken breast should sit out for about 20 minutes before baking. Allowing chicken breast to reach room temperature helps with even cooking. It will take less time for the center of the meat to reach the desired internal temperature while baking.
  3. Mix together smoked paprika, sage, salt and pepper in a small bowl.
  4. Drizzle a layer of melted butter over the bottom of the baking dish.
  5. Rub melted butter all over the boneless, skinless chicken breast.
  6. Season the chicken well on both sides. Place chicken side by side in a baking dish. (I use stoneware)
  7. Roast chicken breast in the oven at 450 degrees, until it reaches an internal temperature of 165 degrees.
  8. Remove from oven and let the chicken rest.

Should You Let Chicken Breast Rest

Yes, chicken breast should rest after baking in the oven. When chicken is cooking in the oven, juices build up in the center of the chicken. If you cut chicken right after it bakes, those juices will leak out.

Resting the chicken for 5-10 minutes, allows the juice to reabsorb into the meat, which helps to keep the meat juicy. To keep the chicken warm while it is resting, rest it under tented aluminum foil to help retain heat.

How long to bake boneless chicken breast will depend on the size. Oven baked chicken breast should be cooked through until no longer pink, from 15-30 minutes.

Always test the doneness by inserting a meat thermometer ($7 Target) into the thickest part of the breast to measure the temperature, it should read 165°F.

One of the most common mistakes people make when baking chicken breast is leaving them in the oven for too long or cooking them at to low of a temperature. This results in dry chicken, and no-one wants that.
